Make vegetables the main event
Inspired by Charred, my bestselling book about cooking vegetables over fire, this class is for anyone who thinks the best bit of a barbecue doesn’t have to be the meat.
We’ll use fire, smoke and really good seasoning to build a generous spread of dishes that are smoky, creamy, crunchy, sharp and fresh. Expect seasonal vegetables alongside beans and grains, cheeses, punchy sauces, dressings and all the little finishing touches that turn a barbecue into a feast.
The food will be predominantly vegetarian, but this isn’t really a vegetarian cookery class. It’s for meat eaters too — anyone who wants everything else on the table to be every bit as exciting as the main event, whether you’re cooking a completely meat-free feast or simply want much better sides for your barbecue.
As with all Fire School classes, we’ll finish the day around the table, sharing everything we’ve cooked, with plenty of time to eat, talk and go back over what you’ve learned.

What you'll learn
COOKING VEGETABLES OVER FIRE
Learn when to grill fast and hot for colour and char, when slower, gentler cooking works best, and how to use wood and smoke to add another layer of flavour.
BUILDING FLAVOUR
Use seasoning, smoke, spice and acidity to build layers of flavour and make even the simplest ingredients taste brilliant.
SAUCES, DRESSINGS & FINISHING TOUCHES
Make punchy sauces, dressings and accompaniments, and learn how the right finishing touches can completely transform a dish.
BEYOND THE GRILL
Use pans, skillets and hot plates to roast, sear, soften and caramelise vegetables in different ways over the fire.
TEXTURE & CONTRAST
Learn how to balance smoky, creamy, crunchy, sharp and fresh elements so every dish has contrast and interest.
BUILDING A FEAST
Bring vegetables, beans, grains and cheeses together with sauces and accompaniments to create a generous, balanced spread made for sharing.
